Fun With Drums... Smokin' Turkey...
Smoke that Turkey!

Throughout the years we have met plenty of customers looking for a 55 gallon drum suitable for building a smoker. If you are one of these customers and/or are interested in building your own smoker than this post is for you. How to properly smoke a turkey in a homemade smoker! Here are the main pointers:

  • Choose a natural Turkey that is about 10 - 12 pounds.
  • Thaw Turkey. (take out gizzards, save for gravy)
  • Brine that Turkey. (add lots of moisture)
  • Fire up your smoker, with a supply of charcoal to last at least 4 hrs.
  • Remove excess fat, clips or anything else on your bird.
  • Rub Turkey with olive oil inside and out. Add herbs like Rosemary if desired.
  • Applewood chunks works well for Turkeys, get big (baseball) handful add to the coals before adding the Turkey.
  • Place a pan with water in it under Turkey (add gizzards etc...) this acts as a catch tray (easy cleanup!) Make gravy from this tray later.
  • Smoke that Turkey! (about an 3.5 - 4 hours)
  • Carefully remove the Turkey.
  • Cover with foil, let sit for twenty minutes.
  • Your done! Carve, eat, and enjoy!

The complete instructions were provided by GrillingCompanion.com and can found here.

If you need to build your own smoker before you grill your Turkey this Thanksgiving then you better get started.
